What I Ate Wednesday – Take 3

Sorry that I’ve been MIA the past couple of days – my parents were in town and we were hanging out…

Parents > Blog readers

Very important to get priorities straight!  And I’ve got ’em!  Sorry, friends!

Anyway, today is What I Ate Wednesday…  What better way to get back to you!

This morning’s breakfast = Breakfast of Champions…  Cold pizza with iced coffee, of course!  (Not sure that you’ll find any other bloggers posting their pics of cold pizza in their office at 7:30 AM…  Or, maybe you will.  I dunno…  At least it’s not oatmeal!  (Which I love, and eat 4 out 5 days – the other day is something crazy like cold pizza – sue me.)

Leftover pizza from Monday evening in wine country. Arugula, garlic, artichokes, ricotta, and mozzarella. SUPER good!

Went out for lunch to Whole Foods.  One of my employees has a birthday tomorrow, but she’s off to Germany (lucky duck!), so we celebrated early.  I was in charge of picking out the celebration dessert!  Photos of the birthday dessert to come later…

Picked up an Avocado al Fresco sandwich, some bulk Parmesan potato chips ($0.66 worth!), and a Zevia Dr. Zevia…

Wait, what?  You wanted a pic of the sando?  Okey-dokey!

Vegan Wheat Roll with avocado, goat cheese, arugula, tomato, olive oil, salt & pepper.

Super yum.

Afternoon snack was the aforementioned birthday celebration food.  Blueberries, blackberries, raspberries, golden raspberries, and strawberries on strawberry shortcake cakes, granola, and non-fat whipped cream.  It was SUPER good.  And, much better than our normal birthday cake celebrations from Ralph’s…  I love being able to pick it out!  Being the boss does have its perks!

BUT…  I don’t have any pictures of it.  I KNOW!  I KNOW!  Worst food blogger ever.  Except, my team doesn’t know about the blog.  Work life vs. blog life.  You know…  Anyway.  I’ll make it up to you.

After Pilates, I didn’t feel like cooking.  So, the salmon in the fridge will have to wait.  Tonight’s dinner was a mishmash of leftovers.  Friday night’s not-so-super pasta dish (whole wheat pasta, parsley, basil, ricotta, and heirloom tomatoes) and Saturday night’s Tuscan chicken with mushrooms in a cream sauce.  Add a hunk of French bread on the side, and a glass of diet Root Beer from Soda Stream, and it was a perfect dinner…

But, for dessert, I had a second helping of shortcake, berries, and whipped cream.  Skipped the granola on this one…  Had a few handfuls on my way to Pilates that I didn’t cop to earlier…

See, the pic was worth the wait!  I wouldn’t let you down…  again.

More posts tomorrow!  Promise!

Super Yum Sauce

I stayed up too late last night, watching documentaries on the Terrorist attacks.  Which made for a very difficult Monday morning, with 7 AM meetings.  And, it was a telepresence meeting…  If you’ve never been in a telepresence meeting, just don’t schedule one for 7 AM on a Monday.  Ever.  It’s mean.

It’s a super fancy video conference, where it appears that the people in the other site are sitting opposite the table from you.  Seriously.  The technology is amazing.  However, despite the amazing technology, no one thought to add a filter when it’s 7 AM Pacific time (my time) and 3 PM UK time.  Our colleagues were all wide awake & refreshed, and the circles under my eyes just could NOT be covered this morning!  I did wake up in time to get fully ready for work, which has been a challenge lately.  Got a few compliments on my new hairstyle, and the Exec. Director remarked about how cute my dress was!  It really does pay to get ready for work in the morning!

TinyLaLa Check-in Day!

Moving forward, I’m going to use Mondays as my check-in day…  That’ll bring me some consistency and remind me that I can’t just go hog-wild over the weekend.  (Not that I did this weekend – I think I did pretty well, even if I didn’t move my body much yesterday, I did 2 workouts on both Friday and Saturday, and made good choices food-wise).

Weight:  208 pounds

Plan for the week:  It’s Triathlon Taper Time, kids!

  • Monday:  Pilates

  • Saturday:  REST – Parents arrive!

Food Plan for the week is on track!  Post on the meal planning process later this week – promise!

Dinner Tonight!

We started the week with this amazing recipe, adapted from Cooking Light‘s June 2011 issue:
Pineapple Chicken Satay
Serves:  4.  Serve with:  Brown Rice & Green veg
  • 1/4 cup Lower-sodium soy sauce
  • 1/4 cup Sweet chili sauce
  • 1/4 cup Natural-style crunchy peanut butter
  • 1 tsp Sesame oil
  • 1/2 tsp curry powder
  • 1 pound Chicken breast, cut into cubes
  • 1.5 cups diced pineapple
  • 1/3 c chopped red onion
  • 1 Tbsp Dried cilantro (or 2 Tbsp chopped fresh cilantro)
  • Juice from 1/2 lemon
  • 1/8 tsp Ground red pepper
  1. Combine soy sauce, chili sauce, and peanut butter in a bowl & stir.
  2. Combine oil, curry, and chicken in a 2nd bowl; toss to coat.  Skewer chicken onto 6″ skewers.
  3. Grill over medium heat, about 4 minutes each side.
  4. Combine pineapple, onion, cilantro, lemon juice & red pepper in a 3rd bowl & stir.
  5. Serve chicken with sauce and pineapple salsa.
This recipe was amazing.  The hubby thought the sauce was a bit salty, but I thought it matched the sweetness of the pineapple salsa really well.  I believe I referred to it as “Super Yum Sauce” a few times during dinner.  And I’m pretty sure I tried to offer some to my dog, because I think every being should experience Super Yum Sauce.  Yes, it’s that good.

Pineapple salsa, flavors mixing...

Once we finished eating (I served it with brown rice, but didn’t make any veg), I cut up some celery stalks, just so that I could finish up the sauce that was on my plate.  I lapped it up.  And then I used some of the pineapple salsa as a “chip” to dip it in.  So good, my friends.  So good.
Of course, dinner wouldn’t be complete without my last cupcake (I forgot to take the cupcakes into work today, but the hubby will do it tomorrow).

Insanity…

Posted on

Insanity. That’s what my to-do list looks like. I’ve got things on there that have been there for weeks (a project at work that I can’t just wrap my head around), and things that should have been there, but weren’t (new watch battery), and reminders (call my BFF’s mom, who’s husband recently passed away).

I’m still feeling unsettled at work, despite having been in my new role for about 4 months. I STILL don’t feel like I know what’s going on! A few of my staff are moving around to different roles, and I just got the transition document this morning, with the list of outstanding details… I realized that I would have NO IDEA how to do any of those things. I hate it that my staff are expected to do things that I couldn’t do… (mostly because I hate it when my manager doesn’t “get” all the nitty-gritty of what I do). I need to remember that we have different levels for different levels of detail — and I need to get used to being a “big picture” person and not a “detail-oriented” person.

Listening to some “Rodrigo y Gabriela“. If you’ve never heard of them — go find their CD! Amazing latin guitar. I saw them live last year (actually almost exactly a year ago), and am still blown away by them. Dancing in my office chair as I type. Luckily, the door is shut, and the iPod is UP!

Heading to north San Diego county this weekend for the Stone Brewery 15th Annual Celebration & Invitational Beer Festival. Of course, I’m not drinking, so not sure why we’re going. But we go every year. The problem is that this year it’s just the hubby & I. And I hate it when he drinks but I don’t. It’s like I grow horns or something…

Haven’t been working out as much as I was recently. I’m still doing something every day (with 1 rest day), but I’ve been doing a lot of Pilates. I LOVE it — except for Pilates Plus, which is a higher-intensity Pilates. It’s SO hard *** I promise that I’ll stop whining soon ***.

Well, yesterday evening I did Pilates Plus, and we were standing on the reformer, right foot planted, and left foot in lunge on the moving reformer. Lunge down, up, repeat. My planted foot was cramping a bit. Next thing I knew, I could feel my foot touching the spring, and I was laying on the floor next to the reformer. It’s like I fell in slow motion! The poor instructor was so concerned, but kept saying, “I’m not going to leave your side”. Ugh — please do! She kept making sure that I was OK, and I indicated that the only thing bruised was my ego. SO embarrassing! Just call me “Grace”. Ugh. Typical.
